When native New Yorker and graffiti writer Dave’s Quality Meat opened in 2003, his restaurant-inspired beer was meant to break the strict limits associated with sneakers at the time.
Dave’s irreverence and unique look were soon noticed by Nike, who offered him the opportunity to design a jacket in 2004. After months of creation, Dave found his inspiration after an early morning hunger for a bacon, egg and cheese sandwich. All he had to do now was find the right silhouette to embody his unusual ‘Bacon’ idea.
“I thought if we were on our feet all day, we might as well have a comfortable shoe,” Dave commented. “So for me the Air Max 90 was perfect.”
Designed by the great Tinker Hatfield a decade and a half before Dave got his hands on it, the Nike Air Max 90 brought bold colors and rugged technology to the running class. Originally known as the Air Max III, the shoe’s archive theme played well with Dave’s M3AT graffiti tag that inspired his boot. Likewise, the pink “Infrared” episode fitted in well with the raw “Bacon” concept the former Zoo York publisher encountered.

“This is either going to be really funny, or it’s going to be really crazy,” Dave recalled, finalizing his idea. “I loved those mistakes.”
Luckily for Dave, Nike liked the idea of bacon. In 2004, 48 pairs were cooked and sold exclusively at Dave’s Quality Meat in New York. It is known that the first batch of “Bacon” in the 90s was a specialty store that only the locals knew about. Complete with Boar’s Head boxes and random dressings meant to mimic raw meat, Dave delivered the cut above. However, the main meal was not bitter.
The then New York sneaker scene took itself very seriously, so Dave’s hyperstrike “Bacon” Air Max 90 was a slow burnout that sold out in days instead of hours. But it didn’t take long for people to realize it. Within a few months, the shoes became unmistakable and defined the era as the second collection of integrated pairs was released in large quantities in 2006. Dave’s sarcasm fueled the trainer’s narrative power, lubricating the wheels of the machine we now know as the Nike collaboration.
Since Dave first went to HAM with Nike, his breakfast tubs have been updated in the form of the 2006 Nike Air Max 95/360 “One Time Only” and the 2009 Nike Air Max 90 Current. when it comes to ships. Simply put, finding a cool pair of the OG “Bacon” Air Max 90’s is next to impossible.
Dave’s Market & Eatery
Now the tried and true “Bacon” returns just in time to celebrate Air Max Day 2021. The leather and suede style pays tribute to Ortiz’s stove from 2004 and is full of nostalgia and taste that still inspires desire 17 years later.
